Currant Chutney |

Ingredients : |

2 cups fresh red currants, 2 cups chopped green tomatoes, 2 cups chopped tart apples, 1 cup chopped onions,
1/2 cup honey,
1/2 cup cider vinegar, 2 teaspoons minced garlic, 2 teaspoon brown mustard seeds, 1 serrano pepper minced (wear plastic gloves when handling),
1 teaspoon grated fresh ginger, 1 lime.

How To Cook ( Makes 4 Cups ) : |

In a large saucepan, combine the currants, tomatoes, apples, onions, honey, vinegar, ½ cup water, garlic, mustard seeds, peppers, and ginger. Bring to a boil over medium-high heat.
Slice the lime into 4 lengthwise wedges. Cut each wedge into thin crosswise slices. Add to the saucepan. Reduce the heat to medium low. Simmer the mixture for 15 to 20 minutes, or until the apples are tender and the mixture thickens slightly.
Cool. Refrigerate in a covered container for several days for the flavor to develop.
Note : The chutney can be refrigerated for several weeks or frozen for several months in a covered container.
