Double-Ginger Ginger Bread |

Ingredients : |

3/4 cup unsweetened applesauce,
1/2 cup molasses, 1/4 cup fat-free egg substitute, 3 tablespoons canola oil,
11/2 cups unbleached all purpose flour, 1 teaspoon baking soda, 1 teaspoon baking soda, 1 teaspoon ground ginger, 1 teaspoon ground cinnamon,
1/8 teaspoon salt, 1/3 cup finely diced candied ginger.

How To Cook ( Makes 9 Servings ) : |

Preheat the oven to 350°F.
In a large bowl, combine the applesauce, molasses, egg substitute, and oil. Stir to mix well.
In a medium bowl, combine the flour, baking soda, ground ginger, cinnamon, and salt. Stir to mix. Add to the applesauce mixture and stir until just mixed.
Mix in all but 1 tablespoon of the candied ginger.
Pour into an 8'' x 8'' no sticking baking dish. Bake for 25 to 30 minutes, or until a knife inserted in the center comes out clean.
Cool on a wire rack. Cut into squares. Sprinkle each piece with the remaining candied ginger just before serving.
Note : A dollop of nonfat sour cream makes a delicious garnish for the gingerbread. |
